Ingredients:

For Cake
2 1/2 cups flour Plain flour
1 1/2 cups suger
1 tbsp white distilled vinegar
3 tbsp unsweetened cocoa powder
2 tbsp red food coloring
1 1/3 cups vegetable oil
3/4 cupsbuttermilk room temperature
1 tbspbicarbonate of soda
1 teaspoonsalt
4 teaspoon pure vanilla extract
2 cups icing suger
cream cheese frosting
2 cups icing suger
1/2 teaspoon vanilla extract
8 ounces cream cheese
1 cups butter unsalted

Instructions:

Method to make the Easy Red Velvet Cupcakes Step 1: The very first step is to preheat the oven to 180C/Gas 4. Place your 48 mini baking cases for mini cupcakes or muffin tins or you can line 24 regular baking cases (as your choice).
Step 2: Its mixing time! Mix the flour, sugar, bicarbonate of soda, cocoa powder and salt in a mixing bowl. Stir the eggs and oil together in another mixing bowl. mix the buttermilk, food coloring, vinegar and vanilla essence in a mixing cup and whisk lightly

Step 3: Its time to mix all the mixer together. Now, add the dry ingredients and buttermilk mixture to the egg mixture. You need to do gradually – starting and ending with dry ingredients. If the red color is not deep as you want, then add more cocoa powder to achieve it.

 

Step 4: Your mixer is ready to bake! Now, fill the mini baking cases until they are ¾ full or fill the regular size baking cases and bake them 13 to 14 minutes(for mini baking cases) or 22 minutes(for regular size cases) or until done. Let them completely cool. You can’t icing them if they are not cool.

 

Step 5: Decoration time! Decorate them with cream cheese icing to the top of each cake. You can add any topping to them as you like. Few decoration idea: With Heart garnish topping: Roll out prepared fondant icing and cut out hearts and decorate with red piping gel. You can use red rose over the cheese cream as your favorite topping Use any fresh fruits like strawberry as topping

Recipe Notes:

Mix all the ingredients (the sugar, cream cheese, butter, salt and vanilla essence) in a large mixing bowl and blend for 2 minutes.
