Ultimate chocolate cake

A very special chocolate cake recipe suitable for any occasion like weddings, birthdays and any time! Fore this cake don’t need highly Skilled cooking experience. It is easy to make.

Instructions:

For The Cake
200 g good quality dark chocolate
200 g butter
1 tbsp instant coffee granules
85 g self-raising flour
85 g plain flour
1/4 tbsp bicarbonate of soda
200 g light muscovado sugar
200 g golden caster sugar
25 g cocoa powder
3 medium eggs
75 ml buttermilk
For the ganache
200 g good quality dark chocolate
284 ml carton double cream
2 tbsp golden caster sugar
For The Cake
  • Preheat your oven first, set the fan to 140C/ and 160C/ gas 3. Take a 7.5 X 20cm round cake tin and grease with butter and line the base.
  • Cut 200g dark chocolate into medium size pieces. Chop 200g butter and mix with chocolate with coffee granules (1 tbsp instant).
  • Pour a heavy based pan with 125ml water and place all the mixed ingredients into pan. Warm them in a low heat till they melted
  • Meanwhile, mix all the following ingredients in a big bowl. Mix them with hand to avoid any lumps. • 85g self-raising flour, • 85g plain flour, • ¼ bicarbonate of soda, • 200g light muscovado sugar, • 200g golden caster sugar • 25g cocoa powder Now, beat 3 eggs in a separate bowl and blend with 5 tbsp buttermilk.
  • Now, mix all the ingredients mixers (melted chocolate, flour mixer into egg mixer) using your stand cake mixer until its mix completely smooth, turned to a super nice dough.
  • Pour the dough into a tin and place in your oven, bake it for 1.25 hour to 1.50 hour. Leave it to cool.
  • Now, cut the cake horizontally into three pieces after it perfectly cool.
    The ganache
  • It’s time to make the ganache – Cut 200g dark chocolate (good quality) into small pieces and pour into a bowl. Take a pan and pour with 284ml carton of double cream and 2tbsp golden sugar and heat them until they are not boil. Tip the double cream mixers into chocolate after take off from heat. Stir them gently until they look and feel smooth.
  • Your cake is about to ready to serve! Make sandwich with the cake layers with little of ganache. Use rest of ganache on the top of the cake and sides using a palette knife.

Recipe Notes:

Use grated chocolate to decorate the cake.

You can check the condition using a thin skewer by inserting it to center point of the cake, if its came out clean, then your cake is ready.

Don’t overheat. You can use microwave oven to melt them, keep them 5 minutes.

You can keep the ultimate chocolate cake for 3-4 days.
